Today’s recipe for our weekly Tasty Tuesday is:
Quick Coffee Cake
* Sift Together:
3 cups Flour
1 1/2 cups Sugar
4 teaspoons Baking Powder
1 teaspoon Salt
* In a separate bowl, combine:
2 Beaten Eggs
1/2 cup Oil
1 cup Milk
* Add liquids to flour mixture and then pour into a greased 9×13 baking dish.
* In a third bowl combine:
4 tablespoons Melted Butter
1 cup Brown Sugar
4 tablespoons Flour
4 teaspoons Cinnamon
* After mixing these ingredients, spread out on top of the batter. Bake at 375* for 20 minutes or until no longer gooey in the middle.
You can half the ingredients for the topping, if you don’t want as much.
I love making this in the evening and then serving it to the boys for a quick breakfast on school mornings. They will just cut a piece and put it in the microwave for 20 seconds. I like to serve it with Scrambled Eggs (if I have the time) or Bananas (if I don’t). I also enjoy a nice cup of coffee with mine!
